Fabián von Hauske Valtierra is the Mexican-born, New York City-based, Michelin-starred chef and co-owner of beloved and critically acclaimed spots such as Contra, Wildair, and Una Pizza Napoletana. He also opened a great no-bullshit smashburger spot called Mighties which I always hit when I’m near Essex-Delancey and hankering for something greasy & delicious, so…pretty often. Fabián has really made his mark on the restaurant scene in New York City since moving here back in 2013 and I can’t wait to see what he does next. Lucky for us, Fabián is here to tell us what he’s been into.

Little Jesus is the best band of all times. I used to play in a band called Rodeo, and my friend Poni decided to quit one day because he wanted to play more like Rilo Kiley and less like Refused and Thrice. I was upset at him for a while, until he started “Little Jesus” If you want to understand what it was like growing up in Mexico City in the 2010s, and then see what that music scene created and what the city is now, you have to listen to them.
